Two More Tainan Restaurants Added to April Michelin Guide - Classic Milkfish Balls and Lamb Soup Tantalizes the Taste Buds

Tainan’s culinary scene clocks up new successes! The international gourmet review magazine Michelin Guide announced yesterday (9th) the new restaurants included in April. The two Tainan restaurants that made the cut were “Chun Tai Hao Milkfish Balls” in the Central-West District up delicious fish balls that are crispy and bouncy at the same time; and “Lien Wu Chiao Lamb Chop Soup” in Xinhua District whose seventy years of experience selling fresh mutton has built a loyal following among locals and tourists. The high ratings given by local and foreign food experts for classic flavors mean that local and foreign travelers should also come visit Tainan and rate the culinary appeal of this historic capital for themselves.

The Michelin Guide announced its new additions for April including two great eateries from Tainan. Three had previously been added in February as well. As 31 Bib Gourmand and 28 recommended restaurants were announced last year (2024), this brings the total to 64 foodie destinations for gourmands to track down and enjoy.

Director-General Lin Kuo-hua from the Tourism Bureau said that the two new additions in April 2 were “Chuan Tai Hao Milkfish Balls” in the Central-West District serving street food as well as a variety of soups and meat balls. The signature crispy balls are made from pure milkfish paste and repeatedly pounded to give them their special crispness and bounciness. The combination soup contains not only crispy balls but also other homemade balls such as shrimp balls, meat balls, and meat dumplings. There is also fresh milkfish belly and fish skin, as well as braised pork rice containing firm rice and fatty pork that is not too greasy with a hint of sweetness. These traditional delicacies will make you keep coming back for more. In Xinhua District, “Lian Wu Chiao Lamb Soup” has been passed down through the family for more than seventy years and is a firm local favorite. Freshly slaughtered lamb delivered daily is served in Angelica soup that has been simmered for at least four years. The menu even includes special items such as lamb liver and lamb scalp. Its famous “Lamb Skin Roll” is only sold on weekends in limited quantities. The roll has an interesting ringed appearance and is quite firm without any hint of mutton’s gaminess. Served with the restaurant’s secret garlic sauce, it is any gourmand’s first pick. The Michelin reviewers also recommended the braised pork rice cooked with lamb oil due to the mix of rich aromas from the lamb and sauce as well as the fragrant, salty flavor.

The Tourism Bureau said that Tainan in April is filled with greenery and energy. In addition to the 2025 National Middle School Athletic Games (4/19 ~ 4/24) being held once again after a 22-year hiatus, there is also the 2025 Glow Worm, Flowers and Hot Springs series of events (~4/20), the 2025 Hutoupi Water and Green 1st Hot Dog Cup (4/12 ~ 4/13), the “Visit Tainan in April and May, Stay One Night and Get One Night Free” promotion and other exciting events. Everyone is invited to come spend a few more days in Tainan for in-depth tourism and sampling all of its great cuisine.
